Temperature and Scale Effects on the Degradation of Vitamin C in Spray Dryers

  • A numerical simulation has been used here to explain some counter-intuitive effects that have been observed experimentally in the degradation of vitamin C in spray dryers, namely, the absence of an inlet temperature effect under some conditions. The lower moisture contents and water activities obtained at higher temperatures reduce the degradation rates at the same time that the higher temperatures increase it, leading to no effect being observed. Temperature and scale effects on thermal degradation are also explored.
