Polyphenolic Extraction from momordica charantia l.; Multivariables Study Using Experimental Design

  • Momordica charantia l. was found to be important sources of polyphenolic antioxidant. A comprehensive study of polyphenolic extraction from momordica charantia l. was conducted using liquid solid extraction using ethanol. The influences of variables (temperature, time of contact, liquid and solid ratio, and stirring speed) were studied using experimental design in order to be able to determine the positive or negative sense due to the affectivity of the extraction process. Influences were determined by the measurement of total phenol extracted shown by the absorbance in the Folin Ciucalteu analysis. The results showed that all variables as individual were determining variable (positive sense). In addition, some interaction between variables (temperature-time of contact, temperature-liquid and solid ratio, time of contact-liquid and solid ratio) performed similar effect. In this study, the highest yield achieved was 5.6 % w/t.
